Winemaking
Dijon clones 777 (58%) and 115 (42%) are hand-harvested and fermented separately with native yeast. After 21 days on skins, the wine is gently pressed and aged for 13 months in French oak barrels, 25% new.
Tasting Notes
The wine is vibrant and expressive, showcasing bright red fruit flavors of cherry, raspberry, and wild strawberry. Subtle notes of baking spice, dried herbs, and forest floor add depth and complexity. Silky tannins and fresh acidity create a balanced, elegant structure, leading to a long, refined finish.
Pair with aged Manchego, grilled eggplant with thyme & balsamic glaze, seared duck breast.
